Ingredients: 600g pork cheeks, 4 tablespoons olive oil, 1 chopped onion, 2 cloves garlic, chopped 2 bay leaves, 2 ripe tomatoes in cubes, 60g sliced chouriça, dried chilies to taste, 2 tablespoons of pulp
tomato, 1 sprig of rosemary, ½ liter of red wine, salt q.s.
Season the cheeks on both sides with salt. In a saucepan light the oil, onion, garlic and bay leaf. Stir and let sauté without dripping. When sautéed, add chouriça, chilli, rosemary and tomato pulp. Stir and let it warm up a bit,
then add the tomatoes. Mix well and cook over well. When the tomatoes start to undo, add the pork cheeks and fry a bit on both sides until the meat gets color. Finally, sprinkle with red wine, cover and simmer
approximately 45 minutes.
